Apfelküchle (apple fritters)
- 125 g flour
- 1 egg
- 2 egg-white
- 3 tablespoons sugar
- ½ cup of milk
- 5 large apples
- 1 tablespoon rum
The apples are peeled, cut into slices (approximately ½ cm), the core is removed, and the apples are covered with sugar and rum and left to stand for 1 hour. A thick pancake batter is prepared from flour, the egg, salt, sugar and milk. The beaten stiff egg-white is folded into the batter. Using a fork, the apple slices are dipped into the dough and fried in hot fat. The fat is taken off before serving and the fritters are sprinkled with sugar.
Zwetschgendatschi (damson plum tart)
- 500 g flour
- 1/8 l milk
- 2 eggs
- 60 g sugar
- 20 g yeast
- 60 g butter
- 1.25 kg of damsons
- 350 g flour
- 150 g sugar
- 200 g butter
Put flour into a bowl, make a well in the middle and add yeast, a bit of warm milk and one teaspoon of sugar. Leave dough to rest in a warm place for approximately ¼ hour. Warm up butter and cover the prepared dough with some flour. Add all ingredients and knead until the dough pulls cleanly from the bowl. Leave to rest in a warm place for approximately 1 hour (covered). Knead the dough again. Roll to the size of the baking tray. Cover the baking tray with grease-proof paper and place the rolled out dough on it.
Remove the core from the damsons and cut them in half. Cover the dough with the damsons.
For the crumble: sift some flour into a bowl, mix with sugar and spices. Melt some butter and add the butter to the mixture while stirring constantly. Cover the plums with the crumble.
Bake in a pre-heated oven at 180° C for approximately 40 minutes.
